3/4 cup quinoa
1 1/2 cup water
1/2 small diced onion
1/2 yellow bell pepper
1/2 orange bell pepper
1/2 red bell pepper
1/2 cucumber (diced)
2 tomatoes (diced)
1 tbs. garlic
2 tbs. lemon juice
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
& salt (to your liking)
For those of you who are asking yourselves, “what is quinoa?” Quinoa is a grain like seed with really no flavor, so it makes it perfect for cooking because anything you add to it, it will taste just that way!
Quinoa salad is something I first tried at Costco. I loved it so much that I decided to start making it myself because it saves money in the long run & it is so easy to whip up! I listed all of the ingredients that you will need up above.
First, you will add the quinoa to water in a pot, and bring it to a boil.
Once it is boiling, lower the heat. You will want to cover the pot with a lid and let it cook until all of the water is dried up by the quinoa.
While you let the quinoa cook you can start dicing your vegetables: onion, peppers, cucumber, tomatoes, & garlic.
Next, let the quinoa cool before you add your vegetables in.
Once the quinoa is cooled and you add your veggies, it is time to mix in the lemon juice, balsamic vinegar, and olive oil.
Mix it up good, and there you have it, a totally healthy, and delicious snack! Plus, a snack with a lot of fiber
