WATCHING THE SUNRISE

Happy, happy Monday to you all! Ahh! First off, what is up with the weather here in San Diego (to all of my San Diego readers)??? It’s so bipolar! Haha, I always get headaches from this kind of gloomy weather, and I just don’t feel myself! And when the weather is this way I have to find something to do to help lift my spirit! I turned to baking!  Today I made healthy white cake cupcakes with delicious chocolate frosting from scratch! It is really so simple, and you only need a few ingredients to recreate it! I posted the ingredients up above! I am totally a chocolate person, but sometimes (like today) when I feel like not going to the store, I have to work with what I have on hand. And I had ingredients for a white cake, so you know what that means, It’s a must that I have chocolate frosting lol. I mixed all of the ingredients in my Kitchen Aid mixer, and then used a large spoon to distribute the cupcake mix into the cupcake holders! My oven was ready at 350 degrees and I stuck the cupcakes in the oven for exactly 20 minutes (cook until the top is a light golden brown). Then I took them out to cool before adding the best part, the frosting!!!  And there you have it, perfect white cake cupcakes, with a decent amount of delicious chocolate frosting  I can’t wait to eat one!
