I try to eat as healthy as I can most days. Quite recently I discovered that I may have a gluten intolerance. I don’t have celiac disease because I have been tested for that. Unfortunately, there is no test out yet that can test a person for a gluten intolerance. So anyway, I have been buying gluten free breads and pastas. Then I had an even better idea. Instead of worrying about eating gluten free pasta noodles, why not use vegetables in place of noodles. It’s healthier and just a good idea in general. I had seen this appliance online that turns vegetables such as zucchini into noodles. The appliance is called a spiraletti by the brand Farberware and it’s only $24.99. We grow our own zucchini here at my house and we have a lot of it, so we thought it would be a good idea to use the zucchini to make noodles for our stir fry last night. I know it may not sound appetizing or as satisfying (trust me I love stir fry noodles with a passion), but you have to trust me that it was so delicious! Zucchini doesn’t have a super strong taste, and with all of the soy sauce and teriyaki sauce that we used in the stir fry I didn’t even notice I was eating zucchini noodles in place of stir fry noodles. The zucchini noodles just absorbed all of the flavor from the soy sauce and teriyaki sauce. Mmm… I wish we had left overs, but it was such a hit in our household last night that we literally scraped the pan clean haha. I definitely recommend giving zucchini noodles a try in any dish that calls for noodles. For the veggies, we buy a big bag of stir fry veggie mix from costco, and I like to drizzle siracha for an added pop of spice to top it all off!
